Fiirst of all let me tell you that I have tried many recipes for idli. But many of them are too complex either because of method, ingredients, or the equipment that they ask me to use. like many times i read that getting a wet grinder is important for making softer idli. if i use mixi to grind then it will not turn out soft. and i have observed that the idli that i make is not that soft. i am sure some of you will know a recipe that i can make work.

Are you using the right mix or Urad Dal and Rice?
I use Rice:Urad dal in the ratio 3:1.
And my Idlis are soft if they ferment well.
Sometimes winter time it gets difficult to ferment.

Mix about 1/4 cup of cooked rice with Urad Dal and grind with it.
This makes the idli softer.

This makes the idli softer.

Instead of cooked rice you can put beaten rice(poha).
But for that you need to soak the poha in water and then drain off the water before grinding.

I do the same.

Put methi in the urad dal while soaking it. Methi helps in proper fermentation. With proper fermentation Idli will be softer.
