Broccoli Soup

Ingredients

1/2 cup chopped onion
1/4 cup chopped celery
2 tsp butter
1/2 cup water
3 tbsp rice
3 cups broccoli florets
1/4 tsp pepper powder
1 cup milk
salt to taste

Method

Steam the broccoli florets till its tender and keep aside. Heat butter in a saucepan and add onion and celery and cook till its tender.
Now add water, rice, salt and pepper. Cover the saucepan and let it cook for 10-15 mins. Now add the steamed broccoli florets and cook for 15 mins. By this time rice should be cooked properly. If not cook longer till rice is soft.
Now blend the soup mix and milk in a blender.
Heat and serve hot.

Rich in folic acid and very healthy for pregnant women.
