300 gm Maida/All purpose flour
1 tbsp ghee
1 tsp carom seeds (ajwain)
1 tsp salt
Water
Oil for frying
Mix Maida, salt, carom seeds. If the ghee is not melted, melt it and add to the maida mix. Mix the ghee nicely with the flour. Now add water to the mix and make a dough. The dough should be pliable but not too soft.
Now divide the dough into 4 eaqual part. Roll each part into thin rotis and then cut it in strips of 1/2cm and then again cut to it into diamond shape.
Repeat the same for each part of dough.
Heat oil in a kadai and fry the diamond cuts till golden brown.
These nimkis can be stored in air tight containers for long.
