1 cup Rice vermicelli/sevai
1 onion (chopped)
1 tomato (chopped)
1 cup chopped vegetables (carrot, french bean, capsicum etc.)
2 green chillies (chopped) (optional)
1" ginger (finely chopped)
1/4 tsp turmeric powder
1/2 lemon juice
salt to taste
water
For tempering
1 tbsb oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/2 tsp channa dal
few curry leaves
Take enough water in a vessel and bring it to boil. Then add few drops of oil in it and add the vermicelli cook it. When it is soft drain the excess water and keep aside the vermicelli in a flat plate.
Heat a pan and put oil in it. When the oil is hot add mustard and cumin seeds. When it splutters add channa dal cook till dal is golden brown. Now add the chopped oinions and cook for 2-3 mins then add the chopped vegetables and green chillies. Cook till the vegetables are soft. Add turmeric power and ginger. Then add the tomato and salt. Cook till tomato is properly done.
Now add the vermicelli mix well cover and cook for 4-5 mins. Switch of the gas then add lemon juice and mix well.
Upma is ready. Serve hot with chutney
