Scrambled Egg with vegetables

Ingredients

2 eggs
1/4 cup chopped onion
1/2 cup finely chopped mixed vegetables (capsicum, carrot, cabbage)
1/2 tsp pepper powder
1 tbsp butter
salt to taste
shredded cheese (optional)

Method

Heat a pan and add butter to it. Once the butter melts add onion and cook for 5 mins. Now add the chopped vegetable and cook till its tender. Beat the eggs in a bowl and now add to the vegetables in the pan. Let the egg cook for a minute or 2 and then add salt and pepper. Cook for a minute.

If you want to add cheese. Put the shredded cheese on the egg and let it melt. And its ready to serve.

Notes

Kids love the colorful look and its very healthy. Good for pregnant women as its rich in protien and vegetables.
