For Dhokla Preparation
1 cup Sooji (also called rawa or semolina)
1 cup Yogurt
1/4 cup Water
1 Pinch Salt (can vary based on taste)
1 Pinch Hing
1/4 teaspoon Turmeric Powder
1/2 teaspoon chopped chilli
2 tablespoon Coriander leaves (chopped)
1 tablespoon ground coconut
2 teaspoon lemon juice
1 teaspoon Cooking soda
For Seasoning
1/2 teaspoon Mustard Seeds
2 tablespoon oil
1/4 cup Water
Mix all the ingredients for Dhokla in a large bowl except for cooking soda and leave it for 30 minutes.
Add cooking soda when you are ready to prepare Dhokla and mix it well.
Put this mixture in any steaming container such as Idli plates, or microwave steamer. Steam at high flame if using stove and use medium temperature if using microwave. It should be done in 10-15 minutes. You can check once at 12 minutes to see if you need to steam it for another 2-3 minutes.
After you have put the Dhokla mix in the steamer, start preparation for seasoning. Heat oil in a pan. Put Mustard seeds in the pan and cover the pan. Allow it to crackle for 1-2 minutes. Then add around 1/4 cup water in it. Let it heat for 3-5 minutes. By this time Dhokla should be ready.
Take out Dhokla and add seasoning on top of it.
