1 cup buckwheat flour
1 cup wholewheat flour
2 cups soy milk
2 eggs
1/4 cup oil
3-4 teaspoons baking powder
2 tablespoons brown sugar
1/2 teaspoon salt
Put all the dry ingredients (i.e. leave aside eggs, oil & soy milk) in a large bowl. Mix them well.
Take another bowl and beat two eggs in that. Add soy milk and oil in the bowl with beaten eggs. Mix it slightly to that egg yolk is mixed.
Now pour the egg, soy milk & oil mixture to the bowl with all the dry ingredients. Stir them so that there are no lumps left. The pancake mixture is ready.
Put the pan on stove with flame at medium. Let it heat for a minute. Put oil on the pan.
Now take a bigger spoon and pour one spoonful on the greased pan.
Look for bubbles on top and edges getting slightly brown, which should happen in anywhere between 2-4 minutes. At this time flip it and then wait for another 2-4 minutes for it to turn golden brown.
You can serve this with honey, cream or even jam.
